Ok so for a couple real world days my charcter has been able to run out of stamina. It goes all the way to the end of the bar but then stops at the end and just stays there forever and its really breaking my immersion. I have quite a few mods and the only one i can think of that efffectts stamina is realistic needs and diseases.

Magicka is an important part of Skyrim - every time you cast a spell, or use some sort of magic, magicka is drained. Thankfully, there are console commands to give your character unlimited magicka so you don't need to worry about running out all of the time.

Unlimited Magicka Cheats
Unlimited magicka can be attained using the setav command. Here's the command you'll need to enter into your console:
player.setav magicka 99999
The above command technically doesn't give you unlimited magicka - it sets your magicka to a level that would be near-impossible to deplete naturally.
Restore Magicka Cheats
Infinite magicka is fun, but it can get boring after a while. If you're looking for a little boost and only want to restore your magicka from time to time, you can use the following console command:
player.restoreav magicka 1000
The above command will restore your magicka to full - it won't push your magicka past the level it'd be when fully restored.

Okay, let's start with the basics and make Skyrim Vanilla + graphics happen:

This guide is rather foul prov (easy to follow / execute) and very recent (September 2020) and keep visuals in a vanilla manner, but every aspect is improved! If you are scared about your rig not making it, still use this guide, but use the performance options offered by many of the used mods. (that's what I did)
I personally added JK's Skyrim and Solitude Docks to this list with no issues. (follow loot to make them compatible with no issues).

I deem the above mods to be the core. You need every single one of them to make Skyrim great again.
There's still a lot more stuff, that can be added, if you personally like it. Like flinching on hit ( + ), destructible clutter, quick loot (like Fall Out 4), storage management, Lock overhaul, NPCs able to craft things for you, advanced camera, ect. ect.

If you want to engage in becoming a werewolf or vampire:
- Sacrosanct (vampire overhaul)
- Moonlight tales (Growl is a viable option, more light weight, but with less features)

If you want a new experience system, which also fix the broken economy system in skyrim:
- Use SkyTweak to disable (or slow down very hard) normal Skill EXP gain.
You are now forced to expend coin to in crease skills and thus to level up. At some point you may also feel the need to venture out and find the true master trainers in order to progress.
This feels / plays a lot better than it might sound at first! You also have full control about which skills will be improved.

BONUS – Some Quest mod suggestions:
- The Paarthurnay Dilemma (MUST HAVE main Quest enhancer)
- Interesting NPCs (3DNPC) (one of the few MUST HAVE 'quest mods' in every game)
- Vigilant SE (+ english voice over)
- (Skyrim Main Quest overhaul (coming soon'ish)
One good advice from me: Don't overdo you here. There are many, many good quest mods. But I suggest to take only few at once and focus on them. And then make a new Skyrim Profile with other quest mods. I speak with many hours of experience of 'not doing the big quest mods I had in mod list' and then having to update everything (redownload lots of stuff and make them compatible again) only to not get to the content, again.

Ps: Some mor insight…
SkyTweak got A LOT of options in the MCM. For combat I suggest to reduce power attack multiplier from 2.0 (vanilla) to 1.0; Also go into 'Attributes' and boost stamina recovery to your liking. I also like to tweak magica and HP regen in there.
I can also highly suggest the 'bleed out' system in the script folder. (instead of diying, you go into downed, loose XX% of your current septime and then recover with full HP. You can tweak lives and money loss. Beware, if you have not enough money to recover, you die.)
I like to tweak things in there like:
- EXP gain speed
- Player HP / mana / stamina regen speeds
- Stamina recovery 6.50 base regen + 300% modificator; combat regen 1.0 (to balance boons/elexier effects)
(Vanilla 5.00; 100%; 0.3) - Stamina recovery stop after Stamina DMG 0.8s
- Mana recovery 10 base regen + 1% modifier (if you don't wear any mana regen stuff, you have basically no mana regen. If you have +50% mana regen, you are at vanilla regen speed; if you get to +100% mana regen, you are at same recovery speed as having vanilla +100%.)
- HP recovery 10 base regen + 1% modifier; combat regen 1.0 (you basically don't regen HP, but if you get a regen buff, it has way more impact. (similar to mana regen, but more extreme)
- Stamina recovery 6.50 base regen + 300% modificator; combat regen 1.0 (to balance boons/elexier effects)
- Bleed out – script
- Adjusting camera position
- correcting balance issues (play with DMG / resistance values until it feels right)
- Max amount of arrows sticking in you
- Time scale modification (vanilla 20; I like 5.)
- book open speed
- camera shake (I like to lower this to 0.5s, because I think it's annoying as heck)
- Kill cam
SkyTweak mod is a BEAST. One substitute for a lot of mods.
Stamina Matters is also a great mod with many good MCM config. I put everything at minimum 15 stamina activation cost, don't activate NPC script; push base attack modifier to 4.0 (vanilla = 1.0). This will make attacks cost a lot of stamina. Especially the heavy weapons, because stamina cost scale with weapon weight. But thanks to SkyTweak this isn't an issue, because we increased stamina recovery significantly. We now can do about 2 to 5 light attacks in a row until we are out of stamina and need to be defensive and recover. (that's a good sweet spot for lvl1; then you get to add effects/ boons, perks and attribute increase to further improve your build, the way you want it)
